Easy Mini Peach Cobbler Recipe: Simple Single Serving
This delicious Mini Peach Cobbler recipe is a treasure. My girls and I have a bit of a sweet tooth, but we do not need to bake a whole peach cobbler. So, mini cobblers to the rescue. My oldest starts dreaming of a warm peach cobbler and a scoop of ice cream the minute she sees the first peaches at the farmer’s market. Fortunately, our roads are often lined with boxes of fresh local peaches at roadside produce stands. This is the best way to use up all those boxes of fresh ripe peaches. 🙂

- Peaches. I have always used fresh peaches. If using frozen peaches, do not thaw, or the texture will not be pleasant. If using canned peaches, drain off the syrup.
- Butter. I use salted butter. I can buy salted butter in bulk and save money. But, adjust the salt if using unsalted butter by adding another pinch.
- Sugar. White sugar is perfect. I limited the sugar as much as possible. My Granny would always sprinkle extra sugar on top.
- All-purpose Flour. If using self-rising, add 1/4 cup flour and omit the salt and baking powder. I reserve my self-rising flour for gravies. 🙂
- Baking Powder. It is the leavening agent for our cobbler.
- Salt. Because it enhances the flavors that we love.
- Milk. I use whole milk, but non-dairy options will work.
- Vanilla Extract. Because we love all things cozy, it makes for the best peach cobbler.

How to Make the Best Mini Peach Cobblers?

Two six-ounce ramekins (oven-safe)
Ingredient List
- 2 tbsp salted butter
- 1/4 cup sugar (divided: 1/8 cup for batter and 1/8 cup for covering peaches)
- 1/4 cup all-purpose flour
- 1/2 tsp baking powder
- pinch of salt
- 1/4 cup milk
- 1/4 tsp vanilla extract
- 1 cup peaches (about 2 peaches)
Step-by-Step Detailed Instructions for Single Serving Mini Peach Cobbler
- First, preheat the oven to 350ºF. Place one tablespoon of butter into each ramekin and place in the oven. Do not burn the butter. Once the butter is melted, remove the ramekin. (The melting of the butter can be completed after mixing the ingredients).
- Next, mix dry ingredients (1/8 cup white sugar, salt, baking powder, flour) in a medium bowl. Then, mix the wet ingredients with the dry ingredients. You do not need to use a separate bowl.
- Then, pour the peaches into a separate medium bowl with 1/8 cup of sugar. Coat peaches with sugar.
- Lastly, divide the peaches into each ramekin with the melted butter and pour the batter equally on top of the sliced peaches. Bake for 30-40 minutes or until golden brown. ENJOY! Best served warm with a scoop of vanilla ice cream and topped with chopped pecans, fresh sliced peaches, and a drizzle of homemade caramel syrup.

When is a peach cobbler done?
It can be tricky to determine the baking time for a cobbler because you cannot see the filling at the bottom. For best results, bake until the top is golden brown and the filling is bubbling.

Easy Homemade Apple Butter Scones
Equipment

Ingredients
Apple Scones
- 1/2 cup COLD butter
- 2 cups all-purpose flour (sifted)
- 1/2 tsp salt
- 1 tbsp baking powder
- 1/2 tsp ground cinnamon
- 1/4 cup milk (+ 1 tbsp for egg wash)
- 1 lg egg (+ another egg for the egg wash)
- 1 tsp vanilla extract
- 1 apple (peeled, chopped and frozen)
- 3/4 cup apple butter
Cinnamon Glaze
- 1 cup powdered sugar (sifted)
- 1-3 tbsp milk
- 1/2 tsp vanilla extract
- 1/2 tsp almond extract (optional)
Instructions
Apple Scones
- First, place a half cup of butter into the freezer while you perform the following steps. The butter needs to be cold. (Peel and chop an apple. Arrange pieces on a baking sheet and freeze for about 20 minutes.)
- Next, combine the dry ingredients (flour, baking powder, salt, sugar, cinnamon) in a large mixing bowl. Measure the milk in a large measuring cup and whisk in one egg and vanilla extract.
- Then, combine the dry and wet ingredients in the large mixing bowl. Shred the cold butter into the batter and combine with a fork. Once the ingredients are mixed, pour the dough on a lightly floured surface and knead it into a ball (or rectangle). Use a flour-dusted rolling pin to roll the dough out (approximately 10").
- Now, generously spread the apple butter over the scone dough, avoiding the edges. Sprinkle the frozen apples along the dough. It's time to roll the dough like a cinnamon roll (into a cylinder) and wrap it in plastic wrap. Chill the dough while you preheat the oven to 425ºF (or approximately 30 minutes chill time).
- Next, prepare a baking sheet with parchment paper. Once chilled, remove the dough and slice it into triangles, using diagonal cuts along the rolled dough (see image above). Place on parchment paper, brush each scone with egg wash (whisked egg and tbsp of milk), and bake for 12-15 minutes or until golden brown. Allow to cool and drizzle with cinnamon glaze (measure the drizzle with your heart). ENJOY!
Cinnamon Glaze
- First, combine all ingredients into a large mixing bowl. Whisk the ingredients. Start with one tablespoon of milk. Gradually add more milk until you reach the desired consistency. You want a smooth, thin glaze to drizzle over the scones.

This cobbler looks fantastic! Great summer recipe. Never tried combining butter with peaches, or any other fruit with butter for that matter. But I like the idea. Cream chees also comes to my mind.
