This simple blueberry coconut baked oatmeal recipe is easy to make and requires very minimal preparation. I love easy recipes, especially in the morning. This recipe ranks as the all-time favorite healthy breakfast recipe by my girls. My girls always wake up early and are ready to eat 10 minutes ago.
