Easy Homemade Apple Butter Scones

Ingredients
  

Apple Scones
  • 1/2 cup COLD butter
  • 2 cups all-purpose flour (sifted)
  • 1/2 tsp salt
  • 1 tbsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/4 cup milk (+ 1 tbsp for egg wash)
  • 1 lg egg (+ another egg for the egg wash)
  • 1 tsp vanilla extract
  • 1 apple (peeled, chopped and frozen)
  • 3/4 cup apple butter
Cinnamon Glaze
  • 1 cup powdered sugar (sifted)
  • 1-3 tbsp milk
  • 1/2 tsp vanilla extract
  • 1/2 tsp almond extract (optional)

Method
 

Apple Scones
  1. First, place a half cup of butter into the freezer while you perform the following steps. The butter needs to be cold. (Peel and chop an apple. Arrange pieces on a baking sheet and freeze for about 20 minutes.)
  2. Next, combine the dry ingredients (flour, baking powder, salt, sugar, cinnamon) in a large mixing bowl. Measure the milk in a large measuring cup and whisk in one egg and vanilla extract.
  3. Then, combine the dry and wet ingredients in the large mixing bowl. Shred the cold butter into the batter and combine with a fork. Once the ingredients are mixed, pour the dough on a lightly floured surface and knead it into a ball (or rectangle). Use a flour-dusted rolling pin to roll the dough out (approximately 10").
  4. Now, generously spread the apple butter over the scone dough, avoiding the edges. Sprinkle the frozen apples along the dough. It's time to roll the dough like a cinnamon roll (into a cylinder) and wrap it in plastic wrap. Chill the dough while you preheat the oven to 425ºF (or approximately 30 minutes chill time).
  5. Next, prepare a baking sheet with parchment paper. Once chilled, remove the dough and slice it into triangles, using diagonal cuts along the rolled dough (see image above). Place on parchment paper, brush each scone with egg wash (whisked egg and tbsp of milk), and bake for 12-15 minutes or until golden brown. Allow to cool and drizzle with cinnamon glaze (measure the drizzle with your heart). ENJOY!
Cinnamon Glaze
  1. First, combine all ingredients into a large mixing bowl. Whisk the ingredients. Start with one tablespoon of milk. Gradually add more milk until you reach the desired consistency. You want a smooth, thin glaze to drizzle over the scones.
