There is quite a bit of debate about flour-to-sugar ratios when it comes to baking muffins. I attempted to cut out as much sugar as possible while still getting a perfectly sweet and structured muffin. The lemon zest crumb topping is optional. I substituted the granulated sugar with coconut sugar when making the crumb and I was not disappointed. However, I typed out the crumb recipe with granulated sugar because I know that is more commonly found it the typical pantry.

When my girls get fussy, we bake. There is something about creating something deliciously beautiful in the kitchen. We had extra lemons in the fruit bowl and it is feeling like summer today.   • Blueberries: I prefer to use fresh blueberries. But if you only have frozen blueberries you will need to bake them longer. You can also toss your blueberries in flour if you are worried about them sinking to the bottom. 
  • Eggs: Eggs give the muffin structure and stability.
  • Coconut Oil: Because it helps our liver remove toxins and boosts our immune system. Coconut oil is a better option than vegetable oil and canola oil.
  • Milk: I use whole milk but buttermilk is an excellent choice. Buttermilk provides a tangy taste and creates a beautiful rise. 
  • All-purpose flour: My favorite is King Arthur.
  • Salt: Because it enhances the flavors that we love.
  • Baking powder: It is the leavening agent for muffins. 
  • Sugar: There is a delicate balance of sugar. I have played with the amount of sugar. Most recipes call for a cup, but I was able to cut it out by 1/4 cup. Sugar will be used in the batter and for a sugary crumb on top. The crumb provides the characteristic crunch of a bakery-style muffin. 
  • Lemon zest: Because it dresses the muffins in rays of sunshine!

The ingredients of a blueberry muffin from Starbucks include sugar, flour, blueberries, plain yogurt, soybean and/or canola oil, eggs, Honey, baking powder, lemon zest, natural flavor, sea salt, whey, and soy lecithin. 

What is Soy Lecithin?

At first glance, soy lecithin is defended by claiming, “It’s generally safe, and it is present in such small amounts.” But soy lecithin is highly processed from soybean oil. Lecithin does occur naturally in soy, but it has to be chemically extracted with a chemical solvent like hexane. It is highly processed from soybean oil (commonly a GMO). This is one reason I prefer to make my baked goods from scratch. I want to provide my family with the best ingredients that I can. Do you need to thaw frozen blueberries before baking muffins?

There are mixed reviews on this one. It was recommended that I allow them to thaw because the ice crystals melt and may make my berries mushy. I find the best results by combining them straight into the batter. It just requires a longer baking time. But, if you are concerned about ice crystals, rinse blueberries in cold water a few times to remove the crystals. 

I prefer to use fresh blueberries. This specific recipe was created using fresh berries and results make vary a bit with frozen berries.

I love to learn. I’m quite the nerd. I read everything from classical literature to statistical analyses. Yes, I enjoy reading the statistics section of a research article. All that to say, I love adding little lessons into our everyday life, like chemistry while baking. 

What is baking powder and the science behind it?

Baking powder is a two-in-one chemical leavening agent that combines powdered alkali (sodium bicarbonate) with a powdered acid (originally tartaric acid). It is not to be confused with baking soda. Baking soda (or sodium bicarbonate) is an alkaline compound that produces carbon dioxide gas when combined with an acid like vinegar, lemon juice, buttermilk, or cream of tartar.

We don’t necessarily need to add acid for baking powder to work. We need heat. When heat is added, the baking powder creates carbon dioxide gas (a byproduct). The gases expand, creating bubbles and making the batter rise.

  • 1 1/2 cup All-purpose Flour
  • 3/4 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 egg
  • 1/3 cup coconut oil (melted)
  • 1/3 cup milk
  • 1 tsp vanilla extract
  • 1 cup fresh blueberries

Lemon Zest Crumb Topping

  • 1/2 cup sugar
  • 1/3 cup All-purpose flour
  • 1/4 cup cold butter (cubed)
  • 1 1/2 tsp cinnamon
  • 1/2 tsp of lemon zest (optional)

Step-by-Step Instructions for the Best Blueberry Muffins Recipe 

  1. Preheat oven to 375ºF. Prepare muffin pan. I cut small sheets of parchment paper to line each cup or use paper liners.
  2. First, combine flour, sugar, baking powder, and salt into a large bowl.
  3. Then, measure 1/3 cup of coconut oil (melted) in a measuring cup or small bowl. Add one large egg to the cup, then top the measuring cup with whole milk until the liquid reaches the one-cup mark. Now, add the vanilla flavoring.
  4. Next, combine the dry ingredients (flour mixture) and the wet ingredients. Fold the blueberries into the batter.
  5. Now, spoon muffin batter into the muffin cups, filling each cup about three-fourths full.
  6. Then, mix the crumb topping by combining sugar, flour, cold butter, cinnamon, and lemon zest. I use a fork to mix the topping. Sprinkle the topping onto the top of the muffins. (Note: You could use a pastry cutter to cube the cold butter, but a butter knife or fork works well.)
  7. Bake the muffins for 15-18 minutes if baking regular-sized muffins. If baking jumbo muffins, bake for 20-30 minutes. Baking times may vary based on the oven. Use the toothpick method to check the muffins. If you insert a toothpick in the center of a muffin and it comes out clean, the muffins are done baking. If batter is on the toothpick, return to oven and bake for another 5 minutes. Allow the muffins to cool in the pan for about 5 minutes then safely transfer them to a wire rack.
  8. Serve warm. Top with melted butter or honey if desired. ENJOY the taste of these delicious muffins and the smell of homemade blueberry muffins swirling through your home.

Tips for Making This Easy Blueberry Muffin Recipe 

Don’t Over Mix

You only want to combine your ingredients and fold in the blueberries to keep from crushing them. 

Storing Muffins

For best texture, store at room temperature for up to 3 days in an airtight container with a tea towel or paper towel in the bottom to collect moisture. Store the muffins in the refrigerator for up to 5-6 days in an airtight container, but this does tend to dry them out. 

Freezes Well

These muffins freeze very well. Place baked and cooled muffins on a tray and put them in the freezer for one hour. Remove the muffins and add them to a freezer bag. This allows the muffins to freeze without sticking together, so you can easily remove them individually when ready to reheat. 

Reheating Baked Goods

If time allows, preheat the oven to 350ºF and bake for 12-15 minutes until cooked through. If you must, microwave with a moist paper towel for 45 seconds. Also, if reheating in the oven, place a little dab of butter to add more moisture to the muffin and for better flavor.
