Homemade Blackberry Whipped Cream Recipe

This delightful blackberry dessert has been served for hundreds of years. It is also known as a Blackberry Fool. The perfect summertime blackberry dessert.

Ingredients
  

  • 6-8 shortbread cookies crumbled
Homemade Whipped Cream
  • 1 1/2 cup heavy cream
  • 3 tbsp granulated sugar
  • 1 tsp vanilla flavoring
Blackberry Puree
  • 2 cups blackberries (save some for garnish)
  • 1/4 cup granulated sugar
  • 1 tbsp lemon juice

Equipment

  • large bowl (or mixing bowl of stand mixer)
  • electric mixer (or whisk)
  • food processor (or blender)
  • fine-mesh sieve to remove blackberry seeds

Method
 

Homemade Whipped Cream Recipe
  1. Add all ingredients (for whipped cream) into a large mixing bowl, using the whisk attachment on electric or stand mixer, and mix on medium-high speed for 10 minutes. Mix until stiff peaks.
Blackberry Puree Recipe
  1. First, combine fresh blackberries, 1/4 c sugar, and tbsp lemon juice into a food processor or blender. Blend until smooth.
  2. Then, pour the puree through a fine-mesh sieve to remove the seeds, using a spatula to push the puree through.
  3. Next, fold the blackberry puree into the whipped cream.
  4. Lastly, serve the blackberry whipped cream dessert in a bowl topped with crumbled shortbread cookies (measure with your heart) and garnished with fresh blackberries. ENJOY!

Notes

  • Make Ahead: The blackberry puree and the shortbread cookies can be made ahead of time, but for the best results, make the homemade whipped cream the day you plan to serve the dessert.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
