Easy Cheesy Black Bean Quesadilla Recipe: Kid-Friendly

This recipe is a perfect quick meal for lunch or dinner with simple ingredients. It goes perfectly with chips and salsa or veggie slices with avocado ranch.

Ingredients
  

  • 1 can (14oz) black beans (drained and rinsed)
  • 1/2 tsp chili powder
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • 1/4 tsp salt
  • 2 tbsp avocado oil
  • 4 tortillas (we prefer flour or almond flour) (8-10")
  • 1 cup shredded cheddar cheese or Mexican blend

Equipment

  • medium bowl
  • small bowl for oil
  • potato masher
  • baking sheet
  • parchment paper optional
  • pastry brush

Method
 

  1. Preheat the oven to 400ºF. Prepare a baking sheet with parchment paper.
  2. First, place the beans (drained and rinsed) in a medium bowl and mash with a potato masher or a fork. Mix in seasoning.
  3. Next, brush the bottom side of each tortilla with a little oil and place it on the prepared pan.
  4. Now, assemble each quesadilla. Sprinkle cheese, a scoop of mashed beans, and top with more cheese. Place a tortilla on top and brush a little oil on each tortilla.
  5. Last, bake the tortillas for 10 minutes or until the cheese is melted and the tortillas are golden brown.

Notes

Store in an airtight container in the refrigerator for up to 3 days. Reheat in preheated oven (400F) for 10 minutes or until cooked through.
