Chocolate Chip Cookie Sandwich with Whipped Cream Filling

This delicious dessert is the best combination of fluffy homemade whipped cream squeezed between soft chocolate chip cookies all from scratch! Enjoy this is yummy treat either chilled or frozen. Or, my babies jump right in and make a delicious mess. :)

Ingredients
  

Chocolate Chip Cookie Ingredients
  • 3/4 cup butter (salted; adjust salt if unsalted) 1.5 sticks melted or browned
  • 1/2 cup white granulated sugar
  • 1/2 cup light brown sugar
  • 1 large egg room temperature
  • 2 tsp vanilla flavoring
  • 2 cups all purpose flour (unbleached)
  • 1 tsp baking soda
  • 1/2 tsp sea salt
  • 1 1/4 cup milk chocolate chips use your favorite choice of chocolate chips
  • sprinkles optional
Homemade Whipped Cream Ingredients
  • 1 1/2 cup heavy cream
  • 3 tbsp granulated sugar
  • 1 tsp vanilla flavoring

Equipment

  • electric mixer with whisk and paddle attachments and mixing bowl
  • large baking sheet
  • medium bowl
  • large cookie scoop
  • wire cooling rack

Method
 

The Best Chocolate Chip Cookie Recipe
  1. Preheat oven to 350°F. Prepare a large baking sheet with preferred non-stick method. Set aside.
  2. In a large mixing bowl, combine melted/softened butter with light brown sugar and white granulated sugar. Use whisk attachment and beat for 5 minutes on medium speed. Then, beat in egg and vanilla until fluffy.
  3. In a separate bowl, combine dry ingredients including flour, baking soda, and salt.
  4. Combine dry ingredients to the mixing bowl of wet ingredients, using spatula attachment on electric stand mixer. Stir until combined. Add 1 cup of chocolate chips and briefly mix or fold in the chocolate chips with a spatula by hand.
  5. Measure and roll dough approximately 3 tbsp and arrange on prepared baking sheet. I prefer using a large cookie scoop. Spread apart evenly along baking sheet. Using remaining 1/4 cup of chocolate chips, press the chips into the tops of the portioned cookie dough balls.
  6. Bake in preheated oven for 12 minutes. Bottoms will just be beginning to brown. Watch carefully bake times may vary based on oven. Let cool.
Homemade Whipped Cream Recipe
  1. Add all ingredients into large mixing bowl, using the whisk attachment on stand mixer mix on medium-high speed for 10 minutes.
Assembling Chocolate Chip Cookie Sandwich with Whipped Cream Filling
  1. Take one cooled chocolate chip cookie and spread desired amount of whipped cream onto the bottom side. Top the cookie with second cookie to assemble sandwich. Optional: add sprinkles to the edges of the filling.
  2. ENJOY! I recommend chilling for 2 hours or FREEZE for at least 2 hours.

Notes

    • MAKE AHEAD: I recommend making sandwiches and chilling for 2 hours or freezing the cookie sandwiches. If you want to make ahead of time, make the chocolate chip cookies and leave at room temperature in an airtight container for up to 5 days.
      Store the whipped cream in the fridge for up to 3 days. Assembly cookie sandwich when desired.
      Or, assemble the cookie sandwiches, place in an airtight container and store in fridge for up to 3 days.
    • FREEZE: This chocolate chip cookie recipe freezes so well. Portion the dough and roll into balls. Arrange them in a single layer in an airtight container for up to 2 months. I find the frozen homemade whipped cream difficult to deal with if I'm using it specifically to assemble the cookie sandwiches. BUT, if you have leftover whipped cream, DO NOT toss it out. Freeze it into portions and add it to hot drinks or use it to top a bowl of fresh fruit for later. It keeps in the freezer for up to 2 months but the texture changes.
    • FROZEN TREATS: This chocolate chip cookie sandwich with whipped cream filling is my favorite treat frozen. Assemble the cookie sandwiches and arrange in a single layer in airtight container for at least 2 hours.
