- Coconut. Unsweetened coconut flakes are a yummy and tropical choice for adding healthy fats and fiber to this crunchy granola recipe.
- Dried Cranberries. The ingredients that caught my attention – choline
- Pure Maple Syrup. Real maple syrup is very high in antioxidants and contains riboflavin, zinc, magnesium, calcium, and potassium.
- Coconut Oil. In my kitchen, I cook with butter, gee, olive oil, avocado oil, or coconut oil (that list grew as I started typing it out). Coconut oil was the perfect cooking oil to give a delightful coconut flavor and help achieve the crunchy texture of the perfect granola.
- Almond Butter. Nut butter is a good source of protein. Try to choose an almond butter with roasted almonds as the only ingredient. Almond butter contains fiber, folate, vitamin E, vitamin B6, and zinc. Vitamin E is known to help with learning and memory.
- Ground Cinnamon. Cinnamon is packed with antioxidants and may have anti-inflammatory properties.

Tip for Making Homemade Crunchy Granola
How to store homemade granola?
Store homemade granola in airtight containers like mason jars at room temperature for 1-2 weeks. If you prefer to make a double batch, place extra in a sealed freezer bag for up to 3 months. Remember to allow the granola to thaw before serving the dried fruit can become quite solid.
Why the addition of Almond butter?
It is important to eat enough protein. This can be a challenge when serving food to young children who love the sweet taste of fruits. Protein helps regulate and stabilize blood sugar levels. If a child (or adult) consumes only carbohydrates, a sharp spike in blood glucose occurs, leading to the famous sugar crash.
How do I eat granola?
Here are a few ways to enjoy your kid-friendly granola:
- Spruce up yogurt bowls with crunchy coconut almond granola. Sprinkle a handful of granola on top of yogurt. Add a little crunch and sweetness to your favorite Greek yogurt.
- Sprinkle granola on top of a smoothie bowl with fresh berries and fresh fruit.
- Serve it in a bowl with milk like breakfast cereal. I have been known to add another scoop of Almond butter for my kiddos to get more protein.
- Smash a banana and sprinkle granola on top.
- Add to a bowl of oatmeal.
- Combine with homemade trail mix.
What if I want to add additional ingredients or I don’t like coconut?
Use this coconut almond granola recipe as a foundational recipe and add some of your favorite things, such as pumpkin seeds, dark chocolate chunks, dried fruit, flax seeds, chia seeds, or a splash of vanilla extract to the oat mixture before baking
How to serve to picky eaters?
Crunchy textures combined with the smoothness of yogurt may be too much for picky eaters at first. Try serving a serving of homemade granola beside their familiar and favorite yogurt with sliced fresh fruit. This allows them to experiment with the different textures of the granola clusters.

Easy Homemade Apple Butter Scones
Equipment
- large mixing bowl
- measuring cup
- baking sheet
- parchment paper and plastic wrap
Ingredients
Apple Scones
- 1/2 cup COLD butter
- 2 cups all-purpose flour (sifted)
- 1/2 tsp salt
- 1 tbsp baking powder
- 1/2 tsp ground cinnamon
- 1/4 cup milk (+ 1 tbsp for egg wash)
- 1 lg egg (+ another egg for the egg wash)
- 1 tsp vanilla extract
- 1 apple (peeled, chopped and frozen)
- 3/4 cup apple butter
Cinnamon Glaze
- 1 cup powdered sugar (sifted)
- 1-3 tbsp milk
- 1/2 tsp vanilla extract
- 1/2 tsp almond extract (optional)
Instructions
Apple Scones
- First, place a half cup of butter into the freezer while you perform the following steps. The butter needs to be cold. (Peel and chop an apple. Arrange pieces on a baking sheet and freeze for about 20 minutes.)
- Next, combine the dry ingredients (flour, baking powder, salt, sugar, cinnamon) in a large mixing bowl. Measure the milk in a large measuring cup and whisk in one egg and vanilla extract.
- Then, combine the dry and wet ingredients in the large mixing bowl. Shred the cold butter into the batter and combine with a fork. Once the ingredients are mixed, pour the dough on a lightly floured surface and knead it into a ball (or rectangle). Use a flour-dusted rolling pin to roll the dough out (approximately 10").
- Now, generously spread the apple butter over the scone dough, avoiding the edges. Sprinkle the frozen apples along the dough. It's time to roll the dough like a cinnamon roll (into a cylinder) and wrap it in plastic wrap. Chill the dough while you preheat the oven to 425ºF (or approximately 30 minutes chill time).
- Next, prepare a baking sheet with parchment paper. Once chilled, remove the dough and slice it into triangles, using diagonal cuts along the rolled dough (see image above). Place on parchment paper, brush each scone with egg wash (whisked egg and tbsp of milk), and bake for 12-15 minutes or until golden brown. Allow to cool and drizzle with cinnamon glaze (measure the drizzle with your heart). ENJOY!
Cinnamon Glaze
- First, combine all ingredients into a large mixing bowl. Whisk the ingredients. Start with one tablespoon of milk. Gradually add more milk until you reach the desired consistency. You want a smooth, thin glaze to drizzle over the scones.
So good
