- All-purpose flour. This gives our baked goods structure.
- Baking powder. It is the leavening agent for our scones.
- Ground Cinnamon. Cinnamon is packed with antioxidants and may have anti-inflammatory properties. This spice is my signature. I am a vanilla and cinnamon-loving girl.
- Butter. I use salted butter because that is what I can buy in bulk for a better value. Unsalted butter works fine. Adjust salt measurements as needed.
- Sea Salt. Because it enhances the flavors that we love and brings out the sweet tones.
- Egg. This gives us the structure of our scone.
- Milk. Okay. Here is the catch: “Mama-make-do.” The perfect combination is 1/2 cup of heavy cream with 1/4 cup of full-fat milk. I have also used sour cream, half-and-half, and even buttermilk. But, whole-fat milk works lovely and is often my go-to.
- Vanilla extract. Vanilla, maple, and cinnamon flavors always capture the flavor of fall so well.
- Apple Butter. The delicious filling for the middle of this apple scone! I also add more on top of one when I’m ready to eat it. Warm the apple butter a bit.
- Apple. Use your favorite apple. I recommend peeling, chopping, and freezing any fruit you are adding to the scone.

Making the Scones
- First, place a half cup of butter into the freezer while you perform the following steps. The butter needs to be cold.
- Next, combine the dry ingredients (flour, baking powder, salt, sugar, cinnamon) in a large mixing bowl. Measure the milk in a large measuring cup and whisk in one egg and the vanilla extract.
- Then, combine the dry and wet ingredients in the large mixing bowl. Shred the cold butter into the batter and combine with a fork. Once the ingredients are mixed, pour the dough on a lightly floured surface and knead it into a ball (or rectangle). Use a flour-dusted rolling pin to roll the dough out (approximately 10″).
- Now, generously spread the apple butter over the scone dough, avoiding the edges. Sprinkle the frozen apples along the dough. It’s time to roll the dough like a cinnamon roll. Roll the dough into a log and wrap it in plastic wrap. Chill the dough while you preheat the oven to 425ºF (or approximately 30 minutes chill time).
- Next, prepare a baking sheet with parchment paper. Once chilled, remove the dough and slice it into triangles, using diagonal cuts along the rolled dough (see image above). Place on parchment paper, brush each scone with egg wash (whisked egg and 1 tbsp of milk), and bake for 12-15 minutes or until golden brown. - First, combine all ingredients into a large mixing bowl. Whisk the ingredients. Start with one tablespoon of milk. Gradually add more milk until you reach the desired consistency. You want a smooth, thin glaze to drizzle over the scones. (I use my stand mixer.)

Keep the dough and butter cold.
This creates the perfect scone texture with flaky layers with hidden buttery pockets. Placing the butter in the freezer is one way to ensure the butter remains cold. If you need to pause while preparing the recipe, place the ingredients in the refrigerator until you can return. (I’m a mama with littles so this happens frequently. It happened while taking these photos (my kiddos were successfully fighting their naps.)
Shred the butter
To shred the cold butter, you can use a box grater that can be used to shred cheese or a pastry cutter (also known as a pastry blender).
Knead only until the dough is combined.
If you continue to knead the dough, more gluten will form and this can make the texture chewy and tough. Once, the dough is formed into a ball cease to knead it.
Storage
Store the scones in an airtight container for up to 3 days. Best eaten fresh or the day after. Extra cinnamon glaze can be stored in the fridge.

These are some of the best scones I’ve ever baked! I had a jar of apple butter I wanted to use up. I did not have whole apple so I did not add that. I subbed 1/2 cup oat flour for 1/2 cup of all purpose flour. I also used buttermilk for the milk.
I rolled the scone dough into a 12″ log as directed and wrapped and chilled. When it was time to bake, I pressed the log until it was 2″ wide and then cut into 2″ squares and baked as directed. I glazed with maple glaze.
