Beef Enchilada Soup Recipe! Soup season is my favorite! A soup simmering on the stovetop makes the coziest atmosphere in a home. This recipe is very similar to taco soup. Except I use my homemade enchilada sauce rather than broth and taco seasoning. My homemade enchilada sauce is made with simple pantry ingredients just like this soup.

This is a hearty soup perfect for a cozy night in. Feel free to play with the toppings and add spice like green chilies or a dollop of queso.

Simple Ingredients Breakdown for Kid-Friendly Beef Enchilada Sauce Recipe

  • Olive Oil. The amount of olive oil required may differ depending on the type of beef you use. If you using leaner meat, I recommend using more olive oil.
  • Ground Beef. This soup recipe can be modified with chicken, venison, or additional vegetables.
  • Onion and Garlic. This is the dynamic duo of superfoods. If it’s soup season, then you bet I am adding loads of garlic, onion, and homemade bone broth to our soups for the immunity benefits.
  • Diced Tomatoes. I prefer fire-roasted. My family loves hearty flavors. If you want a delicious soup, then each item needs to taste good on its own. 🙂
  • Black Beans. Don’t skip the black beans. Adding black beans is an excellent way to add more protein, fiber, and antioxidants.
  • Broth. I have used chicken broth and bone broth, but chicken stock or vegetable broth would work too. The beef broth in this recipe is used primarily to deglaze the pot to prevent pieces of meat from burning to the bottom and interfering with the pressure cooker function.
  • Corn. I prefer fire-roasted corn. If fire-roasted corn is not available, I would use whole corn but not sweet corn.
  • Taco seasoning. Taco seasoning packets are frequently packed with additional preservatives and unwanted chemicals. Taking the time to add homespun flavors with your homemade taco seasonings takes your taco nights to the next level. I keep a large bottle mixed and ready to go. Here is an easy recipe to get you started making your own.
  • Mild enchilada sauce. This soup recipe calls for a jar of your favorite enchilada sauce. I have a homemade enchilada sauce recipe that is made from simple pantry staples.
  • Green bell pepper. These are optional. Bell peppers are very expensive where I live. I added a few bell pepper plants to my garden to freeze and eat over the winter (just for soups and fajitas).

How to Get Kids Involved in the Kitchen?

Teaching your kiddos to cook is such an important life skill and provides a fun, productive bonding experience. Don’t feel that your child has to assist with every task. Begin by picking one or two steps. Making a roux, broth, and measuring spices are all great places to start. I do recommend measuring the spices in a small bowl and chopping the produce before adding heat. I find it helpful to take a few more minutes to prep and gather ingredients when my kids are helping.

These soups are the ultimate comfort food but differ in soup taste and texture. Enchilada soup features mild enchilada sauce and gives a thicker soup. If you added more broth to this soup, you would have a taco soup with all the same delicious flavors.

How to Make Kid-Friendly Easy Beef Enchilada Soup Recipe?

Equipment

Instant Pot (pressure cooker)

Ingredient List

  • 1 tbsp olive oil
  • 1 lb ground beef
  • 1/2 onion (chopped)
  • 1 can black beans (rinsed and drained)
  • 1 can fire-roasted corn (drained)
  • 15 oz red enchilada sauce
  • 1 bell pepper (chopped)
  • 2-3 garlic cloves (peeled and minced)
  • 1 packet taco seasoning
  • 1 28 oz can diced tomatoes (I prefer fire-roasted)
  • 1/4 cup broth (beef, bone, or chicken)

Step-by-Step Instructions for Homemade Beef Enchilada Soup Recipe

  1. First, gather all ingredients. Wash and chop produce.
  2. Next, press the SAUTE button on the Instant Pot. Heat the olive oil in the insert pot. Once the Instant Pot reads “HOT,” brown the pound of ground beef, using a wooden spoon to break up the meat into smaller pieces. Drain excess grease.
  3. Then, deglaze the pot with 1/4 cup broth and scrap the bottom of the pot to remove any stuck pieces. Press the CANCEL button on the Instant Pot. If you do not take the time to deglaze the pot, then bits of food will burn to the bottom, and the Instant Pot will read BURN and will not complete cooking.
  4. Next, add the rest of the ingredients to the pot, place the lid on the Instant Pot, and lock it into place. Set the valve on the top to “seal.” Turn the pressure cooker function on HIGH and set the manual timer for 20 minutes. It will take the Instant Pot approximately 15 minutes to pressurize.
  5. Allow the Instant Pot to naturally release for 10-15 minutes. Then, following your Instant Pot manual, Quick Release the remaining pressure from the pot. I do not allow my kids to assist with this function. The steam too hot, and the risk too great.
  6. Lastly, serve hot with tortilla strips (or tortilla chips) and garnish soup with your favorite toppings such as sliced avocado, diced jalapeños, queso, or sour cream. ENJOY! Store in the refrigerator in an airtight container for up to 4 days.

Notes for Making Homemade Red Enchilada Soup Recipe

Don’t Skip the Deglaze part when Making Soups with Meat

Don’t skip the deglaze part. The broth is used to deglaze the pot and remove any pieces of meat from sticking to the bottom. If you skip this step, pieces could burn to the bottom, interfering with the pressure cooker function. The instant pot will read BURN.

You can always brown your meat in a skillet on medium heat and transfer beef to the insert pot when ready.

Troubleshooting “BURN”

If you forget to deglaze your pot, and the Instant Pot reads BURN. Pressure-release the Instant Pot by following the manual. Do not fret. You have two options. 1) remove the soup and simmer on the stovetop for 20 minutes. 2) if you are unable to attend the soup, scrap the bottom of the pot to remove burnt pieces and set the Instant Pot to Slow Cooker on high for 3 to 4 hours or low heat for 6-8 hours.

Storage

You can refrigerate the soup in a sealed container for up to 4 days or freeze it for up to 3 months.

Our favorite soup toppings include black olives, a dollop of sour cream, shredded cheddar cheese, green onions, tortilla strips, a dollop of queso, sliced avocados, and diced jalapenos.
